The best cous cous recipe EVER!!!

Many people (including me) say they don’t like cous cous.
Well, this recipe converted me and hopefully it will you too!!
500g couscous
1 chicken or vegetable stock cube dissloved in 500ml boiling water
1 large red onion, finely chopped
1/2 jar sun dried tomatoes finely chopped
1/2 tin black olives, finely chopped
zest and juice 1 lemon
2 tbsp olive oil
small bunch coriander, chopped
small bunch parsley, chopped
small handful mint chopped (keep a little back)
small handful toasted pine nuts
1 pomegranate
Place the cous cous in a large bowl and cover with the stock. Cover with cling film.
Leave for a 5 minutes until the water is absorbed.
Fry the onion until soft
Fluff up the cous cous with a fork, add a tablespoon of olive oil.
Mix in the fried onion, olives, tomatoes, chopped herbs and lemon juice.
Serve garnished with chopped mint and toasted pine nuts and pomegranate.
